Score each drumstick 3 times with a knife (cuts through to the bone). This lets the brine penetrate deeper and ensures the thick drumstick cooks evenly all the way through. Brine in buttermilk + hot sauce 2-4 hours.
Mix flour, cornstarch, and all spices. Cornstarch prevents gluten from forming a chewy crust โ keeps it light and crispy. Add 2 tbsp buttermilk brine to flour and work in โ creates extra crispy shards.
